Friday Feast: Meatball & Pepper Penne

Meatball & Pepper Penne

1 box of Penne pasta
2 tsp olive oil
1/2 cup chopped onion
1 each: Red, yellow & green bell peppers, cut into thin strips
1 - 14.5oz can diced tomatoes with basil, garlic & oregano, undrained
1 - 8oz can tomato sauce with basil, garlic & oregano
1 - 16oz package of Italian style meatballs, thawed
1/4 cup grated Parmesan

Cook pasta, as directed. Set aside and keep warm.
Heat oil in skillet over medium, heat.
Add peppers and onions, cook about 5 minutes.
You want the peppers to be crisp-tender.
Stir in tomatoes, tomato sauce and meatballs.
Cover and cook about 10 minutes, or until heated through.
Toss pasta and sauce in a large bowl and sprinkle with cheese.

This was a new recipe for us this week - and it was delicious and easy! The girls licked their plates clean and the leftovers were even better the next day.

Amazing! How do you get your kids to try new food without wrinkling up their noses?
So I know you are a great cook...can you sew?
Hannah's New Year's Resolution is to learn a new hobby...Guess what she picks? Knitting! So, can you knit? I need to teach her how...cause I can sew about as good as I can cook!:)
