Friday Feast: Part Deux

I love Fall! And I love comfort cooking. Tonight, we're having honey-glazed chicken, corn souffle, broccoli, and biscuits (which I do not make from scratch because I don't knead. I don't have patience for that!) And then baked apples for dessert.

Even though I love the infomercial for an at-home rotisserie, I don't own one. I doubt I would use it. But I do love some rotisserie chicken, and this is my mock-version.


Honey-Glazed Chicken1/4 c oil (I use olive)
1 Tbsp lime juice
2 heaping Tbsp honey
1/4 tsp paprika
Seasoning salt to taste
Chicken tenderloins (about 6-8)

Preheat oven to 400 degrees.
Mix all ingredients in a skillet to melt honey. Set aside.
Transfer chicken to baking dish. Bake for 35 minutes, basting with honey mixture.


Corn Souffle
2 cans whole kernel corn, drained
1 small package corn muffin mix
1 cup sour cream
1 stick butter, melted
1 cup shredded cheese

Preheat oven to 350 degrees.
In a large bowl, stir all ingredients together.
Pour into a greased casserole dish. Bake for 45 minutes, or until golden brown.



Baked Apples4 large baking apples (I used Macintosh)
1/4 cup brown sugar
1 tsp cinnamon
1/4 cup chopped pecans
1 tsp ginger
1 tsp nutmeg
1 tsp vanilla
2 Tbsp butter

Preheat oven to 375 degrees.
Wash & slice apples in half. Remove core.
Arrange cut-side up in 8x8 baking dish.
divide butter into 8 equal chunks and place in apples.
Mix remaining ingredients and top apples.
Bake for 40 minutes -
then try not to burn your tongue when you can't
wait for them to cool.
