The Friday Feast: Part LATE

My sweet Carys turns FIVE on Monday. She had her birthday party yesterday, along with a smorgasbord of her favorite foods: pigs-in-a-blanket, mini pizza slices, chicken nuggets, mango salsa & chips, fruit & veggies, and she requested her favorite cake. I thought I'd share it with you, too. It's quite delicious, and a family recipe.


Strawberry Cake
1 box white cake mix
Oil as directed on cake mix box
1 (3oz) box of strawberry Jello
2/3 cup frozen, chopped strawberries
4 eggs
1/2 cup milk

Cream Cheese Icing
1 (8 oz) bar of cream cheese at room temperature
1/2 cup margarine at room temperature
1 box (1 lb) confectioner's sugar
1 tbsp vanilla extract
food coloring, optional

Preheat oven to 350 degrees.
Mix together cake mix and Jello. Add oil and milk.
Add eggs, one at a time, beating well after each.
Stir in strawberries. Pour into greased pans and bake for 30-40 minutes.

Icing: Mix all ingredients until creamy and smooth.
Keep in the fridge until you're ready to frost the cake.

I doubled the recipe to have a larger cake for the party, but the above recipe is a standard two-layer or one 9"x13" cake.
